To make the soup thick, instead adding all that butter, and flour, use this trick. I blend in the blender, a cup of the soup, after it is fully cooked, you can use more if you want too. You can put the milk in with the cup of soup in the blender, but only half the milk. So good!!!

Used coconut milk instead of cow milk and corn starch instead of flour due to intolerances. Some recipes don't work we'll with these changes,but this was great! Have to run copies off to take to church for requests:) I loved it!

This is the best potato soup I have ever tasted. I doubled the recipe. I cooked a lb. of diced bacon,browned the vegetables in a couple tbl.of the bacon grease, added two cans of chicken broth, and pretty much followed the recipe after that. Other than adding a few diced carrots. I will make again and again.

Great comfort food here. It was quick and easy to make. I served some texas cheese toast with it. I shall be making it again and again and again.......... yummmmmmmmmmmmmmm

Oh, and no additional salt is needed...2 TSB of Bullion is plenty of salt.

This is such a fantastic soup recipe! Total time was less than 1 hour. Made the following changes: Substituted half the butter with Olive Oil... The Roux came out very smooth. Used red onion Used sausage instead of ham. Added 2 shakes of cinnamon and nutmeg. This recipe is so good I'm going to try to make a Fish Chowder next time. Thanks!
