Remember, brad pudding, like rice pudding is a "steamed" pudding, it should not be dry. For the person who was having trouble with it, 1. check if your oven is accurate by buying an oven thermometer. Will save you lots of anguish. I cover everything I bake like cakes as soon as it comes out of the oven with saran wrap then foil. If the plastic melts against the sides don't worry, it peels off pan (glass or metal) as soon as it cools. Keeps everything overly moist which for me is great.

Good recipe. If you want to give it "New Orleans twist", serve it with warm Whiskey sauce on top. Yum!

If you try to bake in in a water bath it helps, especially with a custard type pudding. take your pan it is in and place it in a larger pan with about an inch of water in the bottom and try baking it the normal temp and time. sometimes that extra moisture helps. that's how i always bake my break pudding and usually no problems.

March 23, 2013 4:54 PM I'm just starting to get into the baking thing I love to bake and the first thing I started doing was baking my favorite treat Bread Pudding so I tried it twice but I'm doing something wrong and I need someone who know how to bake it tell me what I'm doing wrong. Ok!! I have my bread,2 tbl. spoon of melted butter, 4 eggs,2 cups of milk,3/4 cups of sugar,1 teaspoon of cinnamon and 1 teaspoon of vanilla extract then I set my oven at 350 degrees I mix all my things together in a 8in. pan an let it bake for 45mins. and just before I take it out I see it rise and it looks good but when I take it out it flattens and it's not really that moist like I know it should be so I hope someone can show me or tell what I'm doing wrong.

I just made this recipe. It came out pretty good. I also tweaked it a little. Only used 3 eggs and 9 pieces of bread, and 2/4 sugar. Ten minutes before it was time to take it out of the oven, I melted 2 tbs of butter and added a little brown sugar then I brushed it on top of the bread and left in in the over another 10 minutes. It was golden and delicious
