Same problem as many here. I made according to instructions and after pouring in custard slowly, baking for over an hour (because it was still uncooked and still probably is after 1 hr. 15 minutes) and then chilling for 6 hours, the filling is a runny mess. Not sure what is going wrong with the recipe or where but I do not recommend you waste your time on this.

Your babbling is hilarious I love the custard addition as rhubarb pie is usually quite bland.

Rhubarb custard pies are pretty tricky( haven't tried strawberry with rhubarb yet.) Sometimes they turn out runny and sometimes just perfect, not sure what the factor is. Although I suspect it is because of overbeating on the custard mixture. Make sure ingredients don't sit around and get too warm and just mix it together until the sugar looks mixed evenly in with the rest of the ingredients.

I have this pie in the oven as we speak. I have not yet made a chef John recipe I did not love! You are such an awesome chef! I still remember the very first recipe of yours I tried was the indoor BBQ ribs and to this day those are the only way my husband will eat his ribs. Love love love your cooking!!!

This looks and sounds wonderful, we have Rhubarb growing and have planted up strawberries and I'm definitely going to make this. The Rhubarb is ready now so i may just buy the strawberries from the supermarket.... John I love the wan you present your video recipes....Tapper tapper....Tapper tappper, loved it.

My mamaw used to make rhubarb pie from rhubarb she would pick fresh from where she lived in Kentucky. Good to know the leaves are poisonous. But this recipe with the custard sounds and looks delicious. Chef John is hilarious!

I made this recipe before and I added a bit of cane sugar(organic)(2-3 teaspoons), and also 1-2 teaspoons of honey.Its a very crispy and tasty desert when you put these in!!!

Good to know about the custard, Thanks ladies.. but eggs and cream can be so different depending on brand and where you get them. Canned custard is the best bet.

I agree with walkingfit. I too followed the recipe exactly and it was runny. I,m going to make one with canned custard.
