I've been making this casserole forever. I just microwave the sweet potatoes, like a baked potato...until cooked, immerse in an ice-water bath, remove the skins and mash. So much quicker and easier than peeling, cubing method!

I made this dish on Monday for a pre-Thanksgiving dinner. It was absolutely a hit, and perfect in every way. Great taste without being too sweet. Since I'm not the best of cooks, this dish made me proud.

I love making sweet potato casseroles. They are delicious. I sometimes roast the sweet potatoes first, cool them, then peel them. That gives them a caramel taste. The walnut toppings are great on top, it gives the casserole a crunchy texture.

Does anybody know if it would be ok to make the sweet potato casserole the night before and keep in fridge until ready for topping I get really busy on the morning of Thanksgiving and would like to do as much as I can the night before.

I made this recipe today and it was delicious! I wanted to try it out before Thanksgiving to see If I want to make it for Thanksgiving. My husband loved it also. This one is a keeper for sure.
