FROM THE VIDEO: 2 apples peeled and chopped 1/4 onion chopped 3 med sweet potatoes peeled and shredded MIX APPLES, ONIONS, SWEET POTATOES Cook 4 slices of bacon DRAIN ALL BUT 1 TBLS OF FAT CUT BACON IN PIECES & SET ASIDE Sprinkle lemon juice, salt & pepper to taste and brown chops in reserved fat. DRAIN ALL BUT 1 TBLS OF FAT Optional, deglaze pan with bourbon (I used 1/4 Cup) ADD POTATO, APPLE, ONION, COOK 5 MINUTES STIRRING OCCASIONALLY. Stir in 1/4 tsp salt 1/8 tsp pepper 1/8 tsp nutmeg and 1/4 tsp chervil to potato mix. PLACE IN GREASED PAN, TOP WITH CHOPS SPRINKLE WITH BACON & PARSLEY. BAKE AT 350 DEGREES FOR APPROX 50 MINUTES OR UNTIL CHOPS ARE COOKED THROUGH.

Combine 1/4 cp chopped onion, 3 Shredded sweet potatoes, 2 Shredded apples Cook 4 slices bacon to crisp Save 1 tbsp fat in pan Break up bacon and set aside Rub pork chops with lemon juice Season pork with salt and pepper Brown chops in the bacon fat Drain all but I tbsp fat and deglaze pan with bourbon Add sweet potatoes, apples and onions to pan Cook for five minutes, stirring Add 1/4 tsp salt, 1/8 tsp pepper, 1/8 tsp nutmeg, 1/4 tsp chervil (French parsley) and mix well Place mixture in a greased oven pan Arrange pork chops on top of the mixture Sprinkle with the bacon and chopped parsley Cover with foil and bake at 350 degrees for 50-60 minutes (until the pork chops are tender) Testing the recipe tonight.
