I made the Butternut Squash Soup #2 and I loved it. I also gave some to friends of mine and they loved it also. We even tried it cold and liked it that way also. I baked my squash first instead of cutting it up. We all gave it an A+

If you add grated carrots and onion. Use chicken stock and some nutmeg. When cooked add cream and salt to taste. Delicious. Still low in calories. Can add sour cream on top to serve.

The first time I made Butternut Squash I struggled with cutting and peeling the squash and I have to admit that was a solid reason to never make this again. However, I have since been using frozen squash and life is so much better. In addition I add pears or apples to the recipe and there are hardly any leftovers in my house. The sweetness that they add to the soup is divine. For all those who thought it was "yuck", give it a try, you won't be sorry. I don't like butternut soup without the pear/apple.

I made a butternut squash soup a few years ago. Nobody liked it. My daughter said several college students in a class started talking sharing how their moms had made it once and nobody liked it. Make sure you love butternut squash before you make butternut squash soup :-P

A simple easy way to cut a butternut squash is to put in a 350 oven for half an hour, the skin will come right off.

I cook the whole squash in microwave for 5 minutes before cutting. Much easier to cut.

If you are fortunate to have a pressure cooker it will save the day when dealing with squash. Simple put the whole thing in pressure cooker with plenty of water (very important) then cook on high pressure for 2-3 min. only and It will be soft and easy to work with. Of course cool first.

The last time I tackled a butternut squash, I used a reciprocal saw. Scarey! Can't frozen squash work?

I add 2 Tablespoons of frozen Orange Juice concentrate! After blending, I add 1/2 cup of half & half....serve in a bowl with a dollop of sour cream. (A treat if you're not counting calories)! My family says it reminds them of frozen orange cream popsicles.
