This soup is great! I didn't change a thing and my family loved it! Healthy, too. I had no trouble cutting the squash uncooked. Just used a sharp knife and took my time.

cutting an uncooked squash is a lot of work. Why couldn't you just cut it in half, scoop out seeds and roast for 40 minutes. I do this for preparing squash for my grandson to make a puree and it's so easy. It ends up just the same. I'm going to cook all the other vegetables as the video shows but blend all together with my squash puree to see what happens.

Can I use a different kind of squash? I just baked a green skin squash and the flesh is green near the outside and orange on the inside. No idea what kind it is. Anyhow could/would it work to cook up the other ingredients and then add the squash to it and how much is added. I have about 6 cups cooked squash and need to know what to do with it. I thought of pumpkin pie using squash, but the green flesh makes me hesitate on that idea. LOL

Thank you, SeDress, for the info about the dermatitis!!!!! I have never eaten or used butternut squash before, but I have chronic issues with dermatitis in my hands. I didn't know why I was suddenly having this painful cracking like nerver before. Thank you, now I know!

I have two squash at home: I think they were waiting for this recipe! A note of caution thought: if you haven't peeled butternut squash before: peeling it can lead to temporary squash dermatitis. You could end up with orange/cracked skin on your hands that feels tight, and almost looks as if it's been burned. Washing your hands and applying lotion should help. Better yet, wear rubber or latex gloves while peeling the squash.

Please try this: add coconut milk, ginger and curcuma to this soup, you will be enchanted!
