Roasted Winter Vegetables: Pre-Heat Oven: 400o • Pumpkin peeled, sliced, chunked • 2 Potato unpeeled chunks (wash first no dirt is not seasoning) • 2 Onion Wedges leave root end intact (holds onion together when cooked) • Turnips peeled, cut to wedges, then chunks (TAKE CARE TO NOT STAIN YOURSELF OR YOUR CUTTING BOARD GLOVES OR PLASTIC BAGS IF YOUR IN A PINCH WILL WORK WATCH YOUR FINGERS) • Beats cut into CHUNKS KEEP SEPARATE on parchment paper Works great with all root like vegetables you have on hand carrots, parsnips, sweet potatoes (yams orange), asparagus or other colored potatoes purple for picky eaters to mask beats. No extra trip to the store needed! Spread Evenly on Roasting Pan (cookie sheet) not Beats Mix/ combine in Separate bowl: 2 Garlic cloves sliced 1tsp. cumin seeds ¼ c. Extra Virgin Olive Oil ¼ c. lemon Juice 2 Table Sp. Brown Sugar 1-2 Pinch’s of black pepper Mix Drizzle and Toss to coat evenly SAVE a little for Beats Move over vegetab

I would like a printed copy of the recipe so I could put it in my recipe box for future use. I know it is simple, but I will forget all about it if I don't have a recipe filed for that day when I am looking for a recipe for winter veggies.

I decided to try the video to see the onion cutting tip--otherwise, I too, would prefer print--but it wouldn't play past starting to cut the pumpkin.:( No onion tip for me!

First off what did she put the beets on? Parchment or paper towel? then what did she sprinkle on the veggies at the end? Rosemary?
