Love these pancakes! I always have the ingredients in my pantry, so, they are easy to put together. I also add fresh blueberries or chocolate chips to them from time to time.

These pancakes are really the best. My husband and daughter just love them, I add a teaspoon of vanilla extract, deliciosos!

There is nothing like baking with buttermilk ! From these pacakes( with the mock milk which is great) its lowfat and takes the recipe 10 levels above anything … been making pancakes for over 4 decades and this recipe is very similar to mine … my tweakt is a swig of the best vanilla extract . I also will make 2-3 batches at one time … once that griddle is at the optimum temp, it goes so fast. And I freeze the in baggies. … just had them for breakfast. My neighbor next door( live in a building) smells them cooking two rooms away, rings my bell with plate in hand … I just don't like them to brown and I use a Cusinart griddle, it has a copper lining to distribute heat evenly…Cheers..Tony(NYC)

I am a pancake FREAK and through the over 40 years I narrowed it down to Buttermilk and began using it to bake my cakes also but the addition of that vinegar is simple when you don't have access to Buttermilk. … I keep 2 quarts in my frig … I will have to try the butter ... Usually use veggie oil But I also tweak it with a SWIG of the best Vanilla Extract. Just sends the pancakes over the top and I don't like them to brown. I make 2-3 batches at one time… my neighbor is smelling them cook and she rings my bell with plate in hand … I do freeze the remaining cooked pancakes i, in pills of 5 per bag. So so good. … don't forget when it's Blueberry seasons, I add them as they are cooking or the frozen do just as well. … I don't do it often because I just love the pancake taste and the blueberries are heavenly when cooked , so mostly plain I make and I use that Cusinart griddle that has a copper lining that distributes the heat evenly and I use a low flame.
