I totally get the energy saving aspect of using a slow cooker so I decided to give it a try, following the directions to a "T." As I suspected, the chicken was REALLY dry and I didn't think it was worth the extra AM cooking time or time spent to wash my 6 qt. insert by hand (it doesn't fit in my dishwasher). However, the long cooking time (and bay leaf) did create quite nice flavors. In order to make this recipe work, I'd have to make some major changes which would make it unsuitable for a Wednesday night. I think I'll stick to my 20 minute recipe from "Everyday Food."

For us working Moms, being able to put a meal on in the morning and come home to a family-ready meal is hugely important. For Mistea who wonders about the smartness of crock-pot cooking: Mine goes in the dishwasher and is way easier to clean tan pots and pans, uses way less electricity. I would NEVER put something on the stove that I could do in my slow-cooker.

Hey Mistea, I know what your saying. However, slow cookers have a tendency to use less electricity and are safer than having your stove on for hours at a time. If your home I can see it but if you are at work...? I have a large slow cooker that the main dish comes out so you can not only use it as a serving dish but it is easier to clean. Just sayin! ;)

I don't understand why one would use a slow cooker for a recipe that is ridiculously easy on the stove. The active cooking time is exactly the same and slow cookers are generally more difficult to clean than pots and pans.

A can of rinsed white hominy makes it really special.....instead of the plain old corn!

There is a lot of liquid in there and one tsp of salt should not make much of a difference sodium-wise.

At one time, I had a delicious recipe for tortilla soup which included buttermilk. Over the years I lost the recipe and have been trying to find it again. It was given to a friend of mine by a lady who worked at the Clark County School district food preparation center She has since passé away and it seems that no one still has the recipe. Looked on line but found nothing to compare.

How do you adapt for smaller slow cooker. Would just cutting ingredients in half and reducing time to 5 or 6 hours work.
