Pasteurized eggs are great! They cost a bit more, but are really just like regular eggs in other ways. I always use them to be safe, because I love runny yolks! They'll work fine in this recipe, and be safe.

When I have concerns about egs in a recipe I use the pasteurized eggs.

Dear Betty, I'm betting that the hot butter actually partially cooks the eggs... Also, as long as you don't leave the sauce out for long, it's not going to be more harmful than real mayonnaise which uses raw eggs too. Hollandaise is never good if it sits for more than a few minutes anyway - skins over and not so tasty. So make it and enjoy! Cheers!

Dear Happy Cook, you can omit the cayenne pepper with out much consequence. OR if you like, you can add a TINY pinch of dry mustard.

I don't have cayenne pepper,is there a substitute for cayenne pepper that you can suggest ?
