I will definitely add vanilla bean to my cream mixture to give it more of a vanilla custard flavor. Summer is right around the corner, I am going to be trying this. Seems pretty easy.

You really need to add a Stabilizer to this mixture to prevent Ice Crystals if Ice Cream is kept in the freezer after the first servings. Approx. 1/2 tsp of Stabilizer will work. Be sure your ice cream maker is a freezer type not one in which you have to freezer the bowl before you use it.

This is how I make ice cream when I go thru the work to make it. Frozen custard is very popular on the east coast..unfortunatly, it never caught on in California, so we have to make our own. I also steep vanilla bean when heating the 1/2 & 1/2 mixture.

I think you can pour it into a tray and stir it frequently, but the easiest is to take a one pound and three pound coffee cans with a lid. Put the custard in the smaller one, put the smaller can inside the larger one, sealed of course. Put layers of ice and salt around it, pack well, put on the last lid and put 2 kids three feet apart and have them roll it back and forth for abbot twenty minutes. Voila, ice cream!

Gina, I think most ice cream recipes can be done by placing the mixture in the freezer and stir it occasionally. It takes a LONG time to do it this way, but give it a try. Good luck!!
