I never used canned coconut milk in my life and boy was I presently surprised. It is darned good. I make all kinds of diet drinks by using trivia sugar, ice and water. But I made some 3 large boiled potatoes, 4 large carrots. Then I cut them up into chunks in a skillet add one jar off the not so hot curry sauce. And add the can of coconut it makes a kewl side at that point. But then we make the Emerils Chinese Buns and then add this vegetarian filler into the buns and steam. They are so good you never can imagine that curry coconut milk makes such a good combination.

Made this today in my slow cooker with an already spiced corned beef from my local meat market. Used coconut cream concentrate instead of canned coconut milk, beef broth and didn't add the red curry paste. It turned out FANTASTIC. I think the coconut oil really enhances the beef and there is not a distinct coconut taste. You can't ruin anything with coconut!
