In this video, Chef John turns traditional corned beef and cabbage on its head, braising it with Thai-style coconut milk and red curry paste. See how Chef John prepares the corned beef, braising it with coconut milk, super-hot curry paste—be careful with that!—and fish sauce. These Asian ingredients are all easy to find. You’ll add celery, carrots, and onions, and then, after several hours of braising, potatoes and cabbage. You’ll also see how to cut the corned beef across the grain into beautiful thin slices. The unexpected becomes delicious when the Emerald Isle meets Southeast Asia. Watch the video, then get the recipe for Chef John’s Coconut Corned Beef and Cabbage.

Made this today in my slow cooker with an already spiced corned beef from my local meat market. Used coconut cream concentrate instead of canned coconut milk, beef broth and didn't add the red curry paste. It turned out FANTASTIC. I think the coconut oil really enhances the beef and there is not a distinct coconut taste. You can't ruin anything with coconut!

My good friend is from Thailand and doesn't like my traditional corned beef. Can't wait to make this for her. The hotter the better! Thanks for sharing!
