Butternut Squash and Mascarpone Gnocchi

In this video, you’ll see how to make homemade gnocchi with butternut squash and mascarpone cheese. Chef John will show you a simple way to prep your butternut squash in the microwave! Of course, you can roast your squash in the oven if you like, but for this recipe, the microwave is a quicker and easier way to go. You’ll also see a two-spoon scoop-and-push method to add the dumplings to boiling water. You’ll finish off the gnocchi by browning them in butter until golden brown on the outside and creamy and tender in the center. Easy and excellent! I didn't use mascarpone and it was still good. A hit!!! Will do again. I only do easy stuff. LOL

What could I use instead of the flour? I need to eliminate the gluten! Rice flour would keep it light.
