Garlic is green at some point in its existence. It's like onions before it gets mature.

Nestlover above got it right. He does NOT mean scallions, green onions, spring onions, or garlic scapes. He means green garlic which is garlic that is harvested before the cloves have begun to mature. I live in a major metro area and cannot find them sadly.

I've done this recipie with cooked ham but I mashed everything in a blendor so I had no pieces of veg or ham ALL CREAMY -- in this way no washes of plates.....

"Green garlic is simply immature garlic and looks like a slightly overgrown scallion or green onion. They are pulled by growers when thinning crops and, increasingly, grown as a crop in their own right... Garlic scapes are the curled flower stalks of hardnecked garlic varieties grown in colder climates. They are cut off by growers to encourage better bulb growth and available through early summer in colder growing regions. Crunchy, with a mild garlic flavor, garlic scapes are great in salads and stir-frys." Try your local Farmers' Market.
