I make my own past w/ a hand machine and a food processor. There are so many steps missing here it isn't even funny. Plus that automated roller is so slow compared to a hand machine. It's not hard to make pasta but this makes it looks much too easy and that can only lead to disappointment and some people giving up.

I actually found a hand pasta machine at a Meijer's store for $19.99. It is great!

I think what the narrator meant to say make the dough more 'extensible' meaning strechable..'elastic' means it springs back and shrinks when shaping it. Also the folding was not overlapped enough. Making a complete 'book fold' works better..in my humble opinon. You can also use a food processor to mix the dough or mix by hand and roll out very thinnly with a roller and cut shapes..hand making requires a lot more effort.

To be honest I do not have that kind of mixer. They can be pretty pricey. How do you make homemade pasta without the mixer machine and the pasta machine?

I thought this site might be helpful to you. I've never made noodle with spelt, but can't imagine why it wouldn't work. You might want to also try Spaetzel. A German noodle-type dish. Good luck. I hope you find something she loves as much as pasta. P.S. Trader Joe sells a brown rice noodle in their dry pasta aisle.

I have the KitchenAide pasta attachment [for MANY years now and shame on me, I have never used it]- however I have a granddaughter who can no longer have wheat in any form. I need to get creative with other types of flour. Does ANYONE know if rice and/or potato flour can be used successfully with the pasta recipes? I want to start small and - hopefully - enlarge on my successes! I must think positively, right? I will appreciate any and all comments/suggestions/recipes.
