In this video, you’ll see how to make a tortilla chorizo scramble. This recipe uses high-fiber, whole-wheat tortillas, but, of course, you can also make this with regular flour tortillas. This version is Chef John’s experiment in reducing fat, increasing fiber, and still having a quick and delicious breakfast. The trick is to disguise the unpleasantness of high-fiber whole-wheat tortillas by crisping tortilla strips in a skilled with diced chorizo. After that, it’s a simple matter of tossing in some pepper-jack cheese and scrambling eggs. This is a quick-and-easy breakfast scramble that masks the cardboard texture of high-fiber, whole-wheat tortillas. But if that doesn’t sound particularly appealing, try it with the regular flour tortillas. Get the recipe for Chef John’s healthier version of Tortilla Chorizo Scramble.
