This version is Chef John’s experiment in reducing fat, increasing fiber, and still having a quick and delicious breakfast. The trick is to disguise the unpleasantness of high-fiber whole-wheat tortillas by crisping tortilla strips in a skilled with diced chorizo. After that, it’s a simple matter of tossing in some pepper-jack cheese and scrambling eggs. This is a quick-and-easy breakfast scramble that masks the cardboard texture of high-fiber, whole-wheat tortillas.
