How to Make Fried Sweet Plantains

In this video, you’ll see how to make pan-fried plantains. You’ll learn the best type of plantain to buy—they are not all the same; you want the ripe ones for this recipe. They’re very easy to prep, and Chef John will show you how. You’ll see how to cook them without using rivers of oil, so they come out crispy and caramelized on the outside and tender in the middle without having been drowned in fat. Give this one a try! Serve your fried plantains with rice and beans for a truly delicious meatless vegetarian meal. See the recipe for Chef John’s Pan-Fried Sweet Plantains.

liar.dark plantain isn't always soft.you have to squeeze it too see if its soft and the softer it is the sweeter.green is if u want hard but dark ones can trick u by actually being very hard.People may prefer different colored plantain but i myself like it golden.Plus plantain and fried egg is really nice too.If u use a deep fryer it is all colored everywhere. His ones look raw in the middle. You can do anything with plantain, roast then boil them, etc.

personally,i serve plantain as a side dish/dessert for breakfast/dinner.to make it a dessert, after cutting the plaintain sprinkle demerara sugar on the plaintain and fry.this adds extra caramel on the outside and sweetens the plantain in a better way.
