There’s a good chance most of you have never tried a real aioli. To make Chef John’s version of this Mediterranean sauce you only need four ingredients; fresh garlic, olive oil, salt and lemon. Just as important as the ingredients is having a good mortar and pestle on hand. Slice the garlic then begin to crush with a little bit of salt. It’s the crushing and pulverization of the garlic that gives this sauce that signature taste you can’t recreate any other way. Once a fairly smooth paste is achieved, add a teaspoon of freshly squeezed lemon juice. Next introduce the olive oil slowly, stirring in teaspoon by teaspoon until the oil is gone. Delicious, spreadable and dippable, this simple sauce will be your new favorite condiment for finishing meat dishes or with a roasted artichoke.
