I stuck with the 'tried and true' cream of mushroom soup, then added sour cream as well. The cheddar cheese was a nice addition. I also reduced the amount of chopped onion in the recipe by half and stayed with the French's dried onions as a crusty topper. It turned out a really well. The next time, I'm adding some frozen Miatake (Hen of the Woods) mushrooms that I found this Fall to the green bean mix for an extra treat.

This was a much better version of the old stand by. Be sure to cook the onions so they're somewhat soft.

If you're worried about calories, use fat free sour cream and reduced fat cheddar cheese

I can't eat mushrooms - I always substitute another cream of celery, usually.
