I question the amount of salt too. But I like the idea of using other than green peppers, which I find are usually bitter. But I'll try this recipe before I make changes.

I've seen this or a very similar recipe before. The recommendation from others, and myself, is to add the peppers in the last 30 minutes, depending on how soggy you like your peppers!

Why not just prep the veggies and meat in the morning and do a quick stir fry when you get home? I hate soggy peppers and we never put tomatoes in pepper steak.
