To save a bit of your energy: before mashing the potatoes put the seasonings, butter, onion and cheese then mash away but use your hand mixer instead of the pastry blender. Mash the carrots? Why? Kids won't eat them. Put some of the mashed potatoes in the bottom of a greased casserole, then the meat, carrots, (I add some peas and whole corn), and cover with the rest of the potatoes. Bake and then top with cheese the last 10 minutes.

I usually put the potatoes and carrots on bottom then the meat. I then top with a cornbread mixture. YUM
