We always cook some bacon, really crispy and break it up in the cooked rice. It really adds flavor. You can also add a finely chopped green pepper, green chiles, onions, or what-have-you. This is one of those recipes that can take a lot of variation.

I always wash my rice too! At least 3 times you can see all the starch coming out of it. Also I like to put a couple cloves in when I put in the onion and when I have tomato I dice it up and put it in when I add the tomato sauce! Also if you don't have any broth you can just use water and Chicken bullion! And if you don't have a lid for the pan you can use any type of Cling Wrap just wrap it around the top of the pot as soon as you turn it down and pierce a small hole in the middle to let out the steam! It will come out great! I use to do this when I had to make a giant pot full and didn't have a lid that large!

Do you mean rice that comes in a plastic bag from the manufacturer. I have never washed rice in my life and I use it straight from the bag. Mary

I made this and it turned out great. My husband and I both really enjoyed it. I added some diced fresh green onion and some diced red pepper.

FYI.. I am a hispanic chef and that is not what i consider to be spanish rice. Note: Spanish rice is not wet and though onions are used they are not sauted, they are made in a sofrito. You use sason or safron for color. Tomatoe sause is opt. The rice in this video is more for a chinese recipe with out the onions. broth, and sause. And remember rice is dirty and starchy, so wash it.

You should always rinse rice prior to cooking. Besides cleaning off excess dirt, it removes a lot of the starch.

I make sort of a version of this. It's a one pan meal with hamburger salsa rice kidney beans and corn and diced tomatoes. Takes 20 minutes and is all basically dump and stir type cooking but for some reason there are never any leftovers ;-]
