Discovered this dish while on vacation in Italy and loved it since. So, every time I go back there I have it - I love it!

In Italy they don't use cream for this dish : the egg makes the creamy sauce

I have only ever used room-temperature egg YOLKS, mixed with cream, not the whole egg. The white of the egg in there makes me feel a bit squeamish but I'm sure it's fine. But really, I would make sure they sit out for at least a half hour.

The eggs do cook from the heat of the pasta and the boiling hot water he spooned in. You will not get sick. But yes room temp eggs would be best

As well as the cautions against eating undercooked foods, raw food has its benefits. Our bodies need the natural enzymes for good digestion. We eat "raw" fruits and vegetables, right? I have made this recipe numerous times and the eggs cook perfectly. You don't need to worry. And the taste is delicious.

Not sure the eggs would reach the appropriate temp. Would not recommend for anyone who is pregnant or has a compromised immune system. They are not even allowed to serve soft boiled eggs in hospitals.
