Discovered this dish while on vacation in Italy and loved it since. So, every time I go back there I have it - I love it!

In Italy they don't use cream for this dish : the egg makes the creamy sauce

I have only ever used room-temperature egg YOLKS, mixed with cream, not the whole egg. The white of the egg in there makes me feel a bit squeamish but I'm sure it's fine. But really, I would make sure they sit out for at least a half hour.
