Diana Kandybski-Kohler In your crock pot recipe, do you precook the meat before adding to the peppers or does it cook without turning the peppers to mush? I like the crock idea. Thanks

I make stuffed peppers quite a bit during the cooler months in my crock pot. I use meat loaf mix, chop an onion, add seasonings (dill or dried parsley, season salt, pepper, garlic, whatever I am in the mood for), bullion cubes to @ 2 cups of water. Sometimes I add mushrooms to the mix as well. I turn them on low when I leave for work and hubby turns off when he gets home (they cook @ 8 hrs). I can fit 6 in crock pot and they freeze well too !

Chappy - And I thought I was the only one that knew how to use barley in stuffed peppers!!! I've also used orzo - or was it ouzo???? Hmmmmm - Maybe both!!

Interesting take on this dish--many of the oven cooked ones are blah. My late dad was a chef and I use his method. Stuff the peppers with your seasoned beef mixture (precooked rice added to it if desired), and slowly cook them in a large pot on the stove top in tomato sauce, basting with the sauce occasionally. Serve with some of the tomato sauce that reduces while cooking, and it's delicious--plus the excess sauce has made a terrific Tomato Pepper soup that we enjoy.
