I have not made this yet but I sure want to. Looks wonderful. My question is this. My garden is gone now and I froze a lot of (sliced) zucchini. Can you use frozen in the place of shredded zucchini? If so how? Looking forward to your reply and TY

Great recipe, but instead of only white sugar, my recipe includes 1 C. brown sugar, as well as 1 C. white sugar -- much richer taste!

I made this today with fresh zucchini from my garden. I give this 5 stars as is. I read the post about adding 1 cup applesauce instead of the cup of oil. I did that and It does not change the recipe, still delicious and moist.(I didnt have natural applesauce but had cinnimon applesauce instead) I also give the added applesauce a 5 star too for a healthier choice. Thank you so much. My husband loves this.

I add 8oz can crushed pineapple(drained) , a handfull of choc chips to the batter. The bread is moist and delicious.
