Celeste: He give buttermilk, not milk, as the liquid ingredient. ThuanPoe POH: Add a little lemon juice or vinegar to your milk to make a good substitute for buttermilk. allrecipes.com/HowTo/Common-Ingredient-Substitutions/Detail.aspx

Wonderful video Chef John! The technique is the key to wonderful flaky biscuits. I folded 4X and baked up some awesome biscuits!

I do not use salt just shorting and 1 tbs of sugar baking power and milk flour too of course.

And I know this has buttermilk in it, but my grandma used lard instead of butter. Bad for you, of course! Lol. But the flavor was incredible. She lived into her 90's so it couldn't have been all bad.

Wonderful video. The only thing that put me off a bit is that I was looking for a true "buttermilk biscuit" recipe like my grandma made. It really involved buttermilk, though she hand churned it. There is a tang to buttermilk you can't reproduce using just butter and milk.

Awesome Video! Pretty good, like he says in video, don't handle too much! I only have one single problem with video, he said a little bit of salt? My first thought, was HUH? WHATS THAT MEAN, listened on to hear and see where the written ingredients were.....whew......lol.....AWESOME RECIPE THX =]
