How to Make Pineapple Upside-Down Cake

Watch Chef John make a classic, quick-and-easy pineapple upside-down cake. The keys? A cast-iron skillet and a splash of dark rum. (If you don’t have a cast-iron skillet, you can use a standard one—and the rum is theoretically optional, too.) You’ll see how to make the brown-sugar sauce and the batter, and learn how to create a pineapple-piece puzzle in the bottom of the skillet. You’ll also get tips for flipping your baked cake! Check out Chef John's recipe for Pineapple Upside-Down Cake. Delicious and so easy to make, this one’s guaranteed to turn your world right-side up again.

Pretty sure I already posted here but it's worth saying again.. This is the best "Pineapple Upside-down Cake" I've ever eaten!.. I only had canned tidbits, also added maraschino cherries since I wanted what I wanted ;) We always had this as a kid and have to say, it's better than Moms' recipe!

thank you sooo much for this recipe! i've tried this several times, using different variations. none of them mentioned allowing the butter/brown sugar to reach that consistency. makes the difference!
