This is close to how I make my cheese sauce for my homemade mac n cheese. I didn't know that cooking on too high of heat could cause the grainy texture. :( I will be trying this out soon!

You can find the recipe for all of Chef John's creations at his blog. http://foodwishes.blogspot.com/ But here is the recipe for the Nacho Cheese Sauce: Ingredients (makes about 5 cups of sauce): 1/4 cup melted butter 3 tbsp plus 1 tsp all-purpose flour 3 cups cold milk salt and pepper to taste 1/4 tsp chipotle pepper 1/4 tsp ancho chili powder 1/4 tsp cayenne 1/2 tsp paprika 1/2 lb sharp cheddar cheese, grated 1/4 lb Monterey Jack cheese, grated 1/4 lb Muenster cheese, grated

Always equal parts butter (or oil) and flour for a roux. It looks like about 2 tablespoons of each here and about 3-4 cups of milk. A pound or so of cheese. How thick you want it will determine how much cheese you put in.
