I made this for the 2014 Super Bowl and it was pretty awesome. I made a couple of changes: 1) I used ranch dressing instead of blue cheese (we were feeding kiddos as well and you know they can be). 2) I did use some blue cheese crumbles that I got from the salad bar 3)I also used some green onion throughout the dip and on top 4) I took the advice of a previous reviewer and did not put cheese on the top 4) Lastly, I adjusted the amount of dressing and buffalo sauce by tasting and my preferred texture/creaminess. All-in-all I thought it was pretty darn awesome. It's an easy recipe to adjust to your personal liking.

Chef John: I'm sure bleu cheese is better--but I always use ranch for dipping wings, and use feta cheese crumbles instead because I'm allergic to bleu cheese--not kidding, my tongue swells up--it's not pretty. Maybe it's the particular kind of mold that makes bleu cheese blue.

"I serve it up..with celery case there are some vegetarians or vegans, I don't believe they're allowed to eat crackers..." Yeah, pretty sure they're not supposed to eat the CHICKEN in it, either!!! lol I guess that's Chef John's sense of humor??

You're so right, Paula! This one made my Super Bowl cut. I made it the night before the SuperBowl (tonight-Saturday night), and of course I had to try it out-soooooo good. Great video!

I have made this similar dip many times. It is yummy. There are some ways you can alter it to suit your particular crowd which still turns out very yummy. One change it to substitute ranch dressing (despite what he says) for those who do not like blue cheese. Also, if you can't tolerate "hot", I use a jar of Hooter's medium wing sauce. The dip made this way still has gotten rave reviews everywhere I have taken it.
