If you add some baking soda to the water the eggs will peel easily even very fresh eggs peel once the pH has been changed. I'd use a couple of teaspoons for the amount of water in Chef's recipe.

I had to try this method to boil eggs to see if the york would come out yellow without the green ring. It did!! I live in the high altitude area so my temerature of the water will not go up to 210F. It was about 199F. But they came out just like Chef John's.

Tip: I like my deviled eggs very full, so I add 1 or 2 whole boiled eggs, chopped very finely, to the yolk mixture. Viola -- always have nice full, delicious eggs.

Purchase eggs 7-10 days in advance. Older eggs are easier to peel. Brown eggs are easier to peel. Be sure to add a teaspoon of salt to the water.

Chef John is adorable. I love his sense of humour, his voice and his simplistic approach to recipes! 5 stars from Canada! (I like that he doesn't use canned soups in his recipes)
