There's really no trick to measuring all-purpose flour. It's very easy. First of all you do NOT SCOOP flour into a measuring cup as I've see at least some of the chefs on Food Network do. (Every time I see them do it, I cringe!) You scoop ice cream, you scoop batters, you scoop sugar, but, you do NOT scoop flour! You SPOON the flour into the cup until the flour is heaping, then you level it off with a knife or some other straight-edged utensil. As for measuring cups, yes, I know there are cups for dry (without spouts) and liquid (with spouts) ingredients, but I've always used them interchangeably and have never had any problems. You've heard the old saying, "A pint's a pound the world around." Well, the same is true for measuring cups. A cup is a cup, or a half cup, quarter cup, etc., whether dry or liquid.
