havn't tried this bread yet,but i am well aware of altitude when baking. i am 3800 above sea level and would also like to make the appropiate changes before i try.

PS- I do want to clarify that when it came out well the couple times that it dod, it was awesome! Just wish I could get it to consistently work.

Unfortunately, I have tried this recipe exactly as stated many, many times, and only twice has it worked. I thought it was the humidity of Georgia until I moved to Arizona... now I'm wondering if it's the altitude? We are about a mile above sea level, and although I follow every step precisely, my dough simply comes out wet and sticky.... no matter how much flour i add. Any suggestions for maybe the altitude?

Made this bread the other day. Too simple, unfortunately the bread wasn't as flavorful as expected. I Was thinking of experimenting more, even trying a stout to see where the color of the bread ends up.

Hi, just wondering if I can use bread machine yeast in this recipe..its all I happen to have handy, otherwise I shall go buy some regular yeast.

I had watched this video, before I attempted Chef John's pumpkin bread. It was very helpful to know how to blend and what the final results are. The breads are very similar. After trying the pumpkin bread, I plan to try this one to. That one tasted like Panera bread.

The people that say they can't make bread are all just trying to use the yeast they've had around since 1996 and refuse to buy new yeast because "It looks okay to me!"

My Second Favorite Use for Belgian Ale The hardest thing about this ultra-simple, no-knead bread recipe is somehow managing not to drink that last bottle of beer. In fact, if this recipe goes viral, you may actually see a “7-Pack” introduced into the market. My beer drinking experience far exceeds my beer bread baking experience, so I’m not entirely sure exactly what the beer does here, but anecdotal evidence suggests it does delicious and beneficial things. Besides, it just feels right. When I stirred that bubbly brew into the foamy sponge, I swear I could hear the yeast moaning. This is adapted from a recipe that my Uncle Bill adapted from our famous no-knead ciabatta bread recipe. That dough only uses a pinch of yeast, and takes about 18 hours to rise, but my Godfather proved that you could get similar results in just a few hours with this short-cut method.
