I experiment, i need the olive oil not butter or margarine, often substitute for gluten free for needs, and do tray bakes. I never worry if a bit flat or heavy as this makes filling slices to spread with peanut butter or jams. The quick one bowl, one pa, plus the slow cooker on at least means it is all home baked and not bought with who knows what in it. busy but determined is my motto i suppose.

Sorry about the earlier post. The site did not copy correctly. Here is the recipe. I did not include the chinese 4 spice. Lemon glazed Gingerbread Gingerbread ingredients for one 8 or 9-in square cake: Blend together • 1 2/3 cups all-purpose flour (8-oz by weight) • 1 1/4 teaspoon baking soda • 2 rounded teaspoons ground ginger (3 if you like it spicier) • 1 teaspoon cinnamon • 3/4 teaspoon salt • 1/4 teaspoon Chinese five-spice powder (optional) Stir together • 1 egg, beaten • 1/2 cup white sugar • 1/2 cup dark molasses • 1/2 cup vegetable oil Pour over and stir until smooth • 1/2 cup boiling water Bake at 350ºF or about 35 minutes in 8” square pan. For the glaze: • 1 cup powdered sugar • 1/4 cup lemon juice • 1 tbsp lemon zest
