If you don't have a food processor, use a pastry cutter or 2 knives. Regular vinegar would also work if no apple cider vinegar is available.

In 50 years of baking, I have never made acceptable pastry from scratch. The recipe for Butter Pie Pastry is out of this world ! I baked a Strawberry Rhubarb pie today and it looks and tastes wonderful. I am freezing it and taking it back East with me in a week or so. I doubled your recipe and it took a bit longer to combine ingredients. Thank you Chef John !

A few years ago I rode on a plane with a chef. He told me that all butter crusts would get too brown and be too flaky / dry. His solution--1/2 Crisco, 1/2 butter.
