I made this crust today, for my favorite chicken pot pie recipe. I made the crust nice and thick, as in the video. The whole dish turned out wonderfully! I used 1/2 whole wheat flour for the crust, which meant I had to add 6 tablespoons extra water to achieve the consistency in the video. Otherwise, everything else was the same. I don't have a food processor, so I used two blenders. I weighed out the flour, added the salt, then divided it into four bowls of 3 ounces each. I then added the butter pieces to each of the 4 bowls. Each of the bowls was pulsed in a blender. The consistency was rougher than the video, so I returned the flour-butter mixture to the freezer and remixed it later, finally achieving the proper consistency. I added the water and ACV gradually, then added the extra water 1 tablespoon at a time, until I got the consistency shown in the video. I weighed the dough halves and refrigerated them for 2 hours before use. This crust easily is the best I've ever eaten, s

If you don't have a food processor, use a pastry cutter or 2 knives. Regular vinegar would also work if no apple cider vinegar is available.

In 50 years of baking, I have never made acceptable pastry from scratch. The recipe for Butter Pie Pastry is out of this world ! I baked a Strawberry Rhubarb pie today and it looks and tastes wonderful. I am freezing it and taking it back East with me in a week or so. I doubled your recipe and it took a bit longer to combine ingredients. Thank you Chef John !
