I make these in my floppy silicone muffin pan and that works fine, you just have to be very careful when you get them out. Since they only bake for such a short time they are very vulnerable and you can easily poke through the side or bottom and ruin it. But as long as you're careful with that, you can definitely make these in a muffin pan.

Lisa I don't have ramekins either so I'm going to try my muffin pan. I don't see why it wouldn't work I just need to find an even bigger pan to put the muffin pan in for the water bath.

what other alternative can you use in terms of placing the batter in to bake the cake.
