This can be made into a delicious Alfredo Sauce. I boiled it in chicken seasoning broth then pureed it with he seasoned water and a little cream. Added some flour to thicken the sauce. I did not use any oil or butter. Delicious. Then I added very little mozzarella and parmesan and heated it. I can add either chicken or shrimp. I can't use oil in my cooking or a lot cheese and butter. So this is a great Alfredo Recipe alternative. It is Delicious and As healthy as you can make. Thanks Chef John for this Recipe. This is a good base recipe for healthy sauce.

Use chicken broth or a packet of chicken seasoning in the water when cooking the cauliflower.

This looks too yummy! I like that I can probably whip this up quickly on a weeknight and I'm thinking the leftovers would heat up well. Can't wait to try it!

Found this recipe and then lost it, so I put it together as best as I could remember, it is awesome and my grandsons thought it was super as well, I then found the recipe.

Ingredients:
3 cloves garlic 2 tbsp olive oil 1 head cauliflower, cored, cut in large pieces 1/2 tsp dried Italian herb blend 1/2 tsp red pepper flakes, or to taste salt and fresh ground black pepper to taste 4 cups water 1/4 cup heavy cream 1/2 cup grated Parmesan cheese for topping: 1/2 cup fine bread crumbs 1/3 grated Parmesan cheese 1 tbsp olive oil salt to taste 2 tbsp any chopped fresh herbs (thyme, parsley, oregano, basil, etc) 14-oz box spaghetti, cooked and drained 1/2 lemon, juiced

For totally guilt free pasta use Shiritake Noodles (I saw them on Rachael Ray). They come in linguine, spaghetti, and angel hair. I found them at Safeway in the tofu section. Just make sure to rinse with water before cooking as they come in a liquid. They will take on the flavor of whatever you are cooking.

Lighter Alfredo Sauce 3 cloves of galic toasted in olive oil 1 head of cauliflower Half filled with water Red pepper flakes and salt and pepper Bread crumbs olive oil and parmesan toasted in a fry pan (parsley or thyme added in the end) Once cauliflower is falling apart add a little cream about a ¼ cup to ½ cup Add juice of half a lemon to pasta first before sauce Barilla whole grain pasta spaghetti cut Add parmesan to sauce Pour sauce over pasta then sprinkle with toasted bread crumbs.
