In this video, you’ll see how to make a reduced-fat version of spaghetti Alfredo with cauliflower and just a touch of cream. The secret is pureeing the cauliflower sauce so it comes out creamy and delicious but without all the high-fat cream. You’ll also see how to make tasty, crispy Parmesan crumbs to sprinkle over the top. Check out the recipe for Chef John's Lighter Spaghetti Alfredo. It's surprisingly light, yet so creamy and rich tasting! It’s also vegetarian. Give it a try! See more Chef John videos >>

This looks too yummy! I like that I can probably whip this up quickly on a weeknight and I'm thinking the leftovers would heat up well. Can't wait to try it!

For totally guilt free pasta use Shiritake Noodles (I saw them on Rachael Ray). They come in linguine, spaghetti, and angel hair. I found them at Safeway in the tofu section. Just make sure to rinse with water before cooking as they come in a liquid. They will take on the flavor of whatever you are cooking.

I have watched 3 of Chef John's video recipes and love the idea of lighter versions of hearty pasta meals, can't wait to try the chicken alfredo tonight! Btw, I believe his written recipes are at the foodwishes.com site, as he mentions in his videos.
