I increase mayo to 1 c. and use 1 cup of shredded parmesan cheese, then add a small can of diced mild green chilis and 4-5 drops of tobasco sauce for a tiny bit of kick and flavor. I have also added leftover cooked shredded chicken to it for a more hearty appetizer and it's worked real well.

If using fresh instead of canned artichokes, it's best to buy the mini artichokes. Trim and cook through entirely in water and cut up. The entire mini artichoke can be eaten, choke and all, b/c it is so tender. It is just as good though w/canned or frozen and saves time.
