Way to long in the oven and turned out dry. Cut back on oven time and double the gravy amount.

I am an experienced cook, and I cook this steak frequently. After frying the steak for 5 minute per site, I put the steak in the oven while I make the thick gravy in the pan. Then I add the gravy to the steak. So the whole thing takes about 20 minute.

This does seem a little long on cook time but i bet they are tender when they come out. And Hot like Jane R. is for her age.

The steaks would already be done if browned this long. Instead of 2hrs in the oven is too time consuming and not necessary. Simply drain oil from skillet, return the steak to skillet, pour broth/flour mixture over the steaks, cover and slow simmer until gravy is thickened. Turn steaks once while simmering. About 30 minutes is all the time needed if gravy gets too thick while simmering just add a little more broth. I like to add a little dried onion flakes during the simmering step.

Everyone says this is too long in the over, I agree. But no one has offered up a proper cooking time. I would probably add the gravy ingredients to the pan, heat them and then pour them over the steaks. Put them in the oven for 30 minutes at 350º. They are minutes steaks, they do not an extended cook time, just enough time to mingle the flavors. False I agree. But no one has offered up a proper cooking time. Several comments state browning and baking times are too long. Sooo, what should the browning and baking times be?

Another agree that 5 minutes per side browning and then 2 hours in the oven is WAY too long.

I grew up with my dad soaking the meat in egg and milk, then the flour with just salt and pepper. Fried to a crisp.
