I've made this. It is absolutely delicious. It is even better when you use about 1/2 cup red wine to deglaze the pan (decrease the both accordingly).

I've made roast that was seared first and roast that was not. There is no noticeable difference. It only mater when carmelizing onions. The purpose of using a slow cooker is to be able to just throw everything in there and go. What really makes the difference is making sure there is plenty of liquid and it is cooked long enough to become very tender
