In this video, you’ll see how to make a classic Italian pasta puttanesca with cod fish. Olive oil, minced garlic, red pepper flakes, capers, chopped olives, and white wine get the flavors building fast. Be sure to add anchovies for serious traditional flavor. Chef John’s using fresh cod here, but you can also use dried cod. The secret ingredient, though, is arugula, which Chef John uses as an herb, its bitter flavors playing off the spicy flavors of the sauce and the nutty, sweetness of the Parmesan cheese. Top it off with more freshly grated Parmesan cheese and an extra sprinkle of red pepper flakes, and dig in!
