Chef John's Sunday Meat Sauce

This video shows you the procedure for making a basic red sauce for pasta. Chef John calls this a “procedure” rather than a recipe video because it’s never the same twice. It usually involves a combination of meats, thoroughly browned in the oven. Basically, any combination of meats will work. Here, it includes beef shank, pork ribs, and chicken thighs. Being Italian, we never make a Sunday sauce without using chicken!!People think this is strange....try it without, and you will see the difference!! To keep sauce reasonably priced, we use "meaty pork neck bones" for the flavor of the pork!!

Chef John! My husband's grandfather (from Italy) always made his sauce this way, with a beef roast browned separately then added to the sauce. He would removed the roast and slice it, served on a platter, just like this. This is really the Italian way! Buon appetito!
