I use all of these techniques, however I do one thing very different. I usually cook about a 25 lb. turkey. I cook my turkey with the breast side down for the 1st hour. I challenge you to find a more moist turkey.

I used home made herbed garlic butter under the skin and for basting the turkey. Gives it great taste and keeps it moist.

Butter under the skin on the breast and bacon on top plus basting and apples or onions inside the cavity gives you a very moist Turkey indeed!

I have been roasting the turkey for Thanksgiving dinner for 20 years, and I find that constant basting with a seasoned butter keeps the turkey moist, and keeps your guests wanting more.

I find putting a little bread crumbs on the top of the turkey keeps the turkey moist and juicy.with the season.
