I use all of these techniques, however I do one thing very different. I usually cook about a 25 lb. turkey. I cook my turkey with the breast side down for the 1st hour. I challenge you to find a more moist turkey.

I used home made herbed garlic butter under the skin and for basting the turkey. Gives it great taste and keeps it moist.
