This video shows you how to make traditional penne with vodka sauce. Pancetta is sautéed in a little butter, and then simmered in a vodka, tomato, and cream sauce. The vodka doesn’t add flavor so much as draw deep flavors from the other ingredients. As it cooks, it develops into a rich, velvety sauce that’s amazing over penne pasta. Parmaesan cheese is cream colored. Remember this is a video and lighting changes the color, not the cheese. There are also differences in heaavy cream. Heavy cream that you can get directly from farms is heavier than what is in the stores allowing for a longer shelflife from stores. I am not sure I would want a heavy cream much heavier than what I see in the video. It can't be good for the heart.

I made this exactly as written with half and half instead of heavy cream only because I had it on hand. This sauce is delicious. Thumbs up from the husband also. The flavors blend well together and it takes much more complicated than it actually is. I used real pancetta and Ithink that makes the sauce.

Made this for dinner tonight and it was excellent. I added chopped onion and garlic to the pancetta. I would definitely make this again. Quick, easy and delicious.

@Natalie for a vegetarian option use two shallots instead of pancetta. Add shrimp only at the end if you are doing that or they will be very over cooked.

Saying the Vodka cooks off is not correct.... here are the times for cooking with alcohol, at best you removed maybe 40% of it... tut tut these things have to be taken into account when cooking for others that will then drive; Especially if they have a glass or 2 of wine with the meal. That bit extra can put them over. alcohol added to boiling liquid & removed from heat: 85% alcohol flamed: 75% no heat, stored overnight: 70% baked, 25 minutes, alcohol not stirred into mixture: 45% baked/simmered, alcohol stirred into mixture: 15 minutes - 40% 30 minutes - 35% 1 hour - 25% 1.5 hours - 20% 2 hours - 10% 2.5 hours - 5%

As I am not a meat eater can you please tell me what I can exchange the pancetta with? You mention putting a few shrimps in at the end. Could I just go with all shrimps or something else?

I wish you had all gone over to metric. That cream would have to be the thinnest 'heavy' cream I have seen, looked more like milk, and the parmesan cheese is white,- funny colour, we are used to cream coloured parmesan. Nice recipe, will try it when I have converted the weights.
