Wouldn't the "pretty" broth be without flavour as u would be tossing out the chicken taste?

I cook my chicken breasts with an onion cut in half, celery tops, salt and pepper with about a cup of cold water. When chicken is done, I pull off the white meat (my family only likes white meat) and then I cook the carrots and celery in the broth an put a lot of celery salt and pepper in it. When the veggies are soft, I put in the cooked pasta or rice. Everyone loves it. I wouldn't like those chunky noodles.
