It's a hearty, heavy soup that's perfect for the dead of Winter. (I can't imagine making it for the 4th of July). Winter is when I would have ham bones available from the Christmas and/or New Year's dinners. I love the sweetness of the carrots so if I don't have celery in the house, I'll just double the carrots. Ham, potatoes and root vegetables...is there anything better?

Made this at work in the crockpot. I put the onions, carrots and celery in the pot first with a little of chicken broth to give that a head start.Dice the potatoes small. Add a little dried thyme. I used turkey Kielbasa, diced and browned because that's what I had on hand. At the end I shook the flour in a jar with more chicken broth and added to the soup to get the thickness I desired, then allowed soup to cool and added about 1/2 regular half and half. This was a great simple recipe to whip up soup for lunch at work! I need more recipes for the office using the crock pot and an electric skillet - we own our own business - so are not able to get out for lunch.
